Born in Rouen, north of France, but raised in Bordeaux, the world renowned food and wine region, Sylvain started his career early with his mum in her kitchen. He was always curious to see what his mum was creating, whether she was entertaining family or friends. As his first teacher, she always took great pride in the menu when they were expecting company, Sylvain was always there to assist his mum when she was making a festive Sunday brunch for their friends. Sylvain decided to enroll himself in the professional arena to learn the traditional and true French Cuisine by spending four years in the Culinary School of Talence (a very well known school in France, near Bordeaux). He obtained a high degree of culinary academics. Sylvain always had an appetite to learn, so he decided to pursue his studies further and completed one more year of training in Arcachon. This enabled him to concentrate on the delicacies of seafood and shellfish. He finished second of the session, rated by high-end professionals in the field. He has continued training throughout his career in prestigious places such as the Ritz in London, Lenôtre School and Alain Ducasse in France. The individuals he met along his journey made quite an impression on Sylvain. He still remembers the lessons, which he has incorporated into his daily performance. He has worked for the past 11 years with Sofitel in France and in the United States.
